Place the pork ribs in a pot and pour in water (room temperature) until it covers the pork ribs. Turn on the heat to medium-high and blanch it for 5-7 minutes. Scoop out and throw away the scum, then transfer the pork ribs into a mixing bowl.
Add the marinade into the pork and mix well. Then prepare the other ingredients such as red onion, garlic, coconut water and coriander.
Heat oil in your pan over medium heat. Add in the red onions, stir fry for 1 minute before adding in the garlic, and let them cook until fragrant.
Pour in the marinated pork ribs and let it sear for 4 minutes until the edges are slightly brown.
Pour in coconut water and bring it to a boil. Once it boils, turn down the heat to medium and let it simmer without a lid for 25 minutes, until the sauce thickens.
Coat the pork ribs with sauce, garnish with coriander and serve!
