Soak the dried chilies in hot water and set it aside.
Wash and chop the long beans, garlic and bird’s eye chili.
Cut the salted egg and separate the egg yolks and egg white. Mash up the egg yolk and dice the egg whites.
Scoop out the dried chilies and cut them into smaller pieces.
Heat up oil in a pan over medium-high heat, stir-fry the long beans until they turn bright green, then put them aside.
Turn down the heat and fry the garlic, bird’s eye chili and dried chilies until fragrant, then put it aside.
Cook the salted egg yolk over medium-high heat. Give it a good stir until the egg yolk turns frothy, then throw everything back in (long beans, garlic, bird’s eye chili, dried chilies), adding the egg whites and fish sauce. Mix well and serve!
