Ingredients
12mid joint chicken wings
1thumbgingerjulienned
2spring onionscut into 2" length
2star anise
2tbspsesame oil
Sesame seedsfor garnish

Marinade
1tbsplight soy sauce
1tbspShaoxing wine
1/2tspsugar
1/2tspwhite pepper
1tspsesame oil
1tbspcornstarch (or cornflour)
Sauce
1tbsplight soy sauce
1tbspoyster sauce
1/2tbspdark soy sauce
1/2cupchicken stock
Instructions
Marinade the mid joint chicken wings with the wet ingredients first. Mix well and add the cornflour at the end. Mix again and set it aside
Add star anise and let it sear for 15 seconds before adding the chicken. Sear the chicken for 7 minutes, before flipping them to allow the chicken skin to crisp. Then, pour in the sauce, turn up the heat and bring to a boil. Once it boils, turn down the heat to medium and let it simmer for 15 minutes with the lid on.
After 15 minutes, remove the lid and increase the heat to let the sauce thicken. This takes about 5 minutes. Coat the chicken evenly, garnish with sesame seeds, cilantro and chili, then serve!
