Instructions
Blanch the pork for 5 minutes to remove impurities.
Sear the pork ribs on all sides until 80% cooked, then set them aside.
Fry the ginger, spring onions, star anise until fragrant, then add sugar and let it melt.
Add back the ribs, then water, light soy, oyster sauce, dried plums, white vinegar and dark soy.
Cover the lid to cook over medium heat for 20 minutes, then open the lid and let the sauce thicken.
Time to eat!
