Ingredients

  • 200 g long beans
  • 3 cloves garlic
  • 1 bird's eye chili
  • 1 cooked salted egg
  • 5 dried chilies
  • 1 tbsp fish sauce

Instructions

  • Soak the dried chilies in hot water and set it aside.
  • Wash and chop the long beans, garlic and bird’s eye chili.
  • Cut the salted egg and separate the egg yolks and egg white. Mash up the egg yolk and dice the egg whites.
  • Scoop out the dried chilies and cut them into smaller pieces.
  • Heat up oil in a pan over medium-high heat, stir-fry the long beans until they turn bright green, then put them aside.
  • Turn down the heat and fry the garlic, bird’s eye chili and dried chilies until fragrant, then put it aside.
