  • 640 g boneless chicken thighs


  • 1/2 tsp fermented black beans
  • 3 stalks spring onions
  • 5 sprigs coriander
  • 3 slices ginger
  • 2 tbsp soy sauce
  • 1 tsp fish sauce
  • 1/2 tbsp oyster sauce
  • 1/2 tsp white pepper
  • 1/4 tsp salt
  • 1 tsp sesame oil


  • Dice up the fermented black beans, spring onions, coriander and ginger, then mix with the rest of the sauce ingredients.
  • Slice the chicken into bite-size pieces, then spread the sauce all over it.
  • Steam the chicken for at least 20 minutes until it's cooked through.
