Ingredients

  • 600 g pork ribs
  • 1 red onion sliced
  • 3 garlic cloves chopped
  • 220 ml coconut water
  • coriander leaves for garnish

Marinade

  • 2 tbsp fish sauce
  • 1/2 tbsp oyster sauce
  • 1 tbsp sugar
  • Some black pepper grinded

Instructions

  • Place the pork ribs in a pot and pour in water (room temperature) until it covers the pork ribs. Turn on the heat to medium-high and blanch it for 5-7 minutes. Scoop out and throw away the scum, then transfer the pork ribs into a mixing bowl.
  • Add the marinade into the pork and mix well. Then prepare the other ingredients such as red onion, garlic, coconut water and coriander.
  • Heat oil in your pan over medium heat. Add in the red onions, stir fry for 1 minute before adding in the garlic, and let them cook until fragrant.
  • Pour in the marinated pork ribs and let it sear for 4 minutes until the edges are slightly brown.
  • Pour in coconut water and bring it to a boil. Once it boils, turn down the heat to medium and let it simmer without a lid for 25 minutes, until the sauce thickens.
  • Coat the pork ribs with sauce, garnish with coriander and serve!
