Plum Pork Ribs
Ingredients
- 500 g pork ribs
Sauce
- 3 slices ginger
- 1 stalk spring onion (white part)
- 1 piece star anise
- 2 tbsp sugar
- 2 cup water
- 1 tsp light soy sauce
- 1/2 tbsp oyster sauce
- 2 pieces Chinese dried plum
- 1 tbsp white vinegar
- 1 tsp dark soy sauce
Instructions
- Blanch the pork for 5 minutes to remove impurities.
- Sear the pork ribs on all sides until 80% cooked, then set them aside.
- Fry the ginger, spring onions, star anise until fragrant, then add sugar and let it melt.
- Add back the ribs, then water, light soy, oyster sauce, dried plums, white vinegar and dark soy.
- Cover the lid to cook over medium heat for 20 minutes, then open the lid and let the sauce thicken.
