With a hint of sugar, soy sauce and oyster sauce on Spam (or processed canned pork), every bite is packed with so much guilty yums. The humble can of Spam is transformed into a star player in this recipe. Cubes of Spam are seared to crispy, golden perfection, taking on a whole new dimension of flavour. These crispy nuggets are then bathed in a luscious glaze, a blend of sugar, light soy sauce, oyster sauce, and water. The sauce thickens to coat the Spam, creating a tantalizing blend of sweet and savoury, with a hint of umami that is simply irresistible.

I have a soft spot for Spam despite all it’s nutritional deficiencies, because I relied on it a lot while going through university as a quick and easy source of protein in my meals, without having to spend on expensive takeout food. You could add mixed vegetables or some salad to make it a tiny bit healthier, but having this Soy Glazed Spam Rice with Runny Egg Yolk still beats other types of ridiculous dorm food that I’ve seen my friends eat, due to either a shortage of cash or just plain laziness (soy sauce with plain rice, anyone? 😂). Ingredients

  • 2 cups cooked rice
  • 1 can spam cut into small cubes
  • 3 eggs
  • 1/4 cup sugar
  • 1/4 cup light soy sauce
  • 1/4 cup oyster sauce
  • 1/4 cup water
  • salt to taste
  • pepper to taste
  • vegetable oil to cook

Instructions

  • Prepare the sauce with sugar, light soy sauce, oyster sauce and water.
  • Heat the vegetable oil in a pan over medium heat. Add the diced Spam and cook until it turns slightly crispy and golden brown, about 4-5 minutes.
  • Add the sauce and continue on medium heat until it thickens. Mix well to coat all the Spam and set it aside the Spam and sauce mixture.
  • Pan fry the eggs (I like them sunny side up).
  • Plate the rice, add the Spam and top it with mayonaise and egg. Enjoy!
  • Optional step: Garnish with sliced green onions and toasted sesame seeds if desired.
