Enoki Mushroom Egg Tofu
Ingredients
- 2 egg tofu
- 6 prawns
- 100 g enoki mushrooms
- 1 tsp sugar
- 2 tsp oyster sauce
- 2 tsp light soy sauce
- 2 tsp tomato sauce
- some hot water
- some cornstarch
- chilli garnish
- spring onion garnish
Instructions
- Coat the tofu with cornstarch and pan fry them till golden, set it aside.
- Pan fry prawns till they turn red, set it aside.
- Turn the heat down, spread the enoki mushrooms at the bottom of the pan, and top it with egg tofu. Add sugar, oyster sauce, light soy sauce, tomato sauce and hot water.
- Turn up the heat and let it boil for 5 minutes.
- After 5 minutes, add prawns in and let it simmer for another 1 minute.
- Garnish with chopped chilli and spring onion, then serve!
