Enoki Mushroom Egg Tofu with delicious soupy, sweet and savoury sauce, in this super easy recipe

For all you mushroom-lovers out there, this Enoki Mushroom Egg Tofu is another one of my favorite dishes that brings together the delicate richness of egg tofu, the earthy umami of enoki mushrooms, and the succulent sweetness of prawns, combined with a delicious soupy, sweet and savory sauce that melds everything together for another perfect one-pot recipe to go with your rice!

Egg tofu, known for its silky texture and mild flavor, forms the foundation of the dish. Its creamy consistency provides a perfect canvas to absorb the flavors of the accompanying ingredients. Prawns, with their vibrant color and delightful sweetness, are pan-fried to perfection, adding a succulent dimension to the dish. Enoki Mushroom Egg Tofu

Another one of my favourite dishes with a delicious soupy, sweet and savoury sauce that melds everything together for another perfect one-pot recipe to go with your rice!

Ingredients

  • 2 egg tofu
  • 6 prawns
  • 100 g enoki mushrooms
  • 1 tsp sugar
  • 2 tsp oyster sauce
  • 2 tsp light soy sauce
  • 2 tsp tomato sauce
  • some hot water
  • some cornstarch
  • chilli garnish
  • spring onion garnish

Instructions

  • Coat the tofu with cornstarch and pan fry them till golden, set it aside.
  • Pan fry prawns till they turn red, set it aside.
  • Turn the heat down, spread the enoki mushrooms at the bottom of the pan, and top it with egg tofu. Add sugar, oyster sauce, light soy sauce, tomato sauce and hot water.
  • Turn up the heat and let it boil for 5 minutes.
  • After 5 minutes, add prawns in and let it simmer for another 1 minute.
  • Garnish with chopped chilli and spring onion, then serve!
