Tomato and Eggs, so simple, healthy and delicious, and only takes 10 minutes!

This simple yet flavorful recipe has been a beloved staple in Chinese households for generations, and my family is no exception. Growing up with these tomato & eggs, it is one of my all-time favourite dishes, with it’s delicious sauce and flavorful eggs and tomatoes that are the perfect complement to rice, and it definitely helps that it’s also very healthy (great nutrition for the kids!). It is so easy to cook in only 10 minutes, which is why this dish has been in our weekly rotation for decades!

At the heart of this delightful stir-fry are two humble ingredients: tomatoes and eggs. Tomatoes, with their vibrant red hue and juicy interior, bring a burst of freshness to this dish. When sliced into wedges and gently cooked, they release their natural sweetness, balancing the savory elements of the dish.

  • 2 tomatoes
  • 5 eggs
  • 1 tsp vinegar
  • 3 cloves garlic minced
  • 1.5 tsp salt
  • 1 tsp sugar
  • 2 tbsp ketchup
  • Some pepper
  • Some water
  • cilantro for garnish


  • Cut up tomatoes into wedges.
  • Crack the eggs into a bowl, add vinegar and give it a good mix.
  • Saute minced garlic over medium heat until it's fragrant, then add in tomatoes and some water to let it cook.
  • Once the tomatoes are a little soft, add ketchup, salt, sugar and a few dashes of pepper then set it aside.
  • Use a clean pan and pan fry the eggs over medium heat. Gently stir the eggs until they are 80% cooked, then turn off the heat, pour in the cooked tomato and mix them well.
  • Garnish with cilantro and serve!
